My daughter has just left to start university in another city, and—quite spontaneously and instinctively, as most mothers would (particularly Italian ones, who tend to be very demanding and always worried, even when their children are independent, married, and have children of their own!)—I find myself thinking about her embarking on this new journey. The idea of her managing her daily meals on her own brings a mix of emotions.

I catch myself pondering her diet—will she be able to eat enough nutritious food and maintain a balanced, healthy lifestyle amidst the challenges of university life?

As a mother, the concern lingers in my mind. Will she be able to resist the temptation of unhealthy fast food, which so often seems like the most convenient option for busy students? I hope she remembers the importance of nourishing her body with wholesome meals that will fuel both her mind and body as she navigates the demands of academic and social life.

It’s only natural for a mother to worry about her child’s well-being, especially when they are away from home. I find some comfort in knowing that I’ve sent her off with the knowledge and skills to make wise food choices, and I hope she embraces a healthy lifestyle even in the midst of her newfound independence.


Breakfast with Eggs à la Coque is the breakfast my daughter adores! She has a real soft spot for these runny delights. So, while she is away from home, I wanted to remind her that this can still be a great option to start her busy day.

Eggs—as many as you like, but 2 is ideal!

  1. Fill a small saucepan with cold water.

  2. Bring the water to a boil over medium heat.

  3. Once boiling, gently lower the eggs into the water using a tablespoon and simmer for about 3–4 minutes.

  4. Remove the eggs and place them under cold running water to cool. This helps make peeling the shells easier.

  5. Using a spoon, carefully tap and remove the tops of the eggs.

  6. Season with salt and pepper, and serve hot with buttered toast for dipping.
